Dark Chocolate Salted Caramel Recipe

Dark Chocolate Salted Caramel Pots de Crème Recipe:

Ingredients:

1 100g Mapro Dark Chocolate (chopped).
2 1/2 cup heavy cream.
3 1/2 cup whole milk.
4 1/4 cup sugar.
5 1 tbsp butter.
6 1/4 tsp sea salt.
7 2 tbsp cornstarch (to thicken).
8 1 tsp vanilla extract.

Instructions:

Make the Caramel:
In a saucepan, melt the sugar over medium heat until it turns amber (about 5-7 minutes). Stir constantly to avoid burning.
Once the sugar melts, carefully add butter and stir until smooth. Add sea salt and mix well. Set aside to cool.
1 Prepare the Chocolate Mixture:
In another saucepan, combine milk and cream. Warm over medium heat until it’s hot, but not boiling.
Add chopped Mapro Dark Chocolate to the warm milk-cream mixture. Mix until the chocolate has fully melted and the mixture becomes smooth.
2 Thicken the Mixture:
In a small bowl, mix 2 tbsp cornstarch with 2 tbsp cold milk to make a slurry.
Add this slurry to the warm chocolate mixture and cook for 2-3 minutes, stirring constantly, until the mixture thickens into a custard-like consistency.
3 Combine the Caramel:
Stir in the caramel sauce you prepared earlier and vanilla extract into the chocolate custard. Mix until well combined.
4 Bake:
Preheat your oven to 160°C (325°F).
Pour the chocolate mixture into small ramekins or pots. Place the ramekins in a baking dish, and fill the dish with hot water halfway up the sides of the ramekins (this creates a water bath).
Bake for 25-30 minutes, or until the custard is set with a slight jiggle in the center.
5 Cool and Serve:
Let the pots de crème cool to room temperature, then refrigerate for a minimum of 2 hours until completely chilled.

Optionally, top with whipped cream or extra caramel sauce for added flavor.

2 1/2 cup unsalted butter (softened).
3 1/2 cup brown sugar.
4 1/4 cup white sugar.
5 1/2 tsp vanilla extract.
6 1 1/2 cups all-purpose flour.
7 1/2 tsp baking soda.
8 1/4 tsp salt.
9 1/4 cup caramel sauce.

Instructions:

1 Preheat Oven: Preheat to 180°C (350°F) and line a baking sheet with parchment paper.
Make Dough: Cream butter, brown sugar, and white sugar. Add vanilla extract and mix.
2 Mix Dry Ingredients: Sift flour, baking soda, and salt. Gradually add to the wet mixture.
3 Melt Chocolate: Melt Mapro Dark Chocolate and mix into the dough.
4 Add Caramel: Fold in caramel sauce, leaving streaks.
5 Shape Cookies: Roll dough into balls, place on the sheet, and flatten slightly.
6 Bake: Bake for 10-12 minutes until golden at the edges. Cool for 5 minutes.
7 Add Sea Salt: Sprinkle sea salt on top of each cookie.
